Repeatability is the entire skill. Once the same recipe reliably gives you the same cup, making it better becomes straightforward.

Technique
The gap between a decent pour-over and a great one is smaller than the gap between a consistent one and a random one. If every cup is different you cannot tell whether a change helped, so you never accumulate any knowledge. Lock the process down first, then improve it.
Everything that happens in a pour-over is one of these: grind size, water temperature, ratio, pour schedule, and agitation. Every recipe you have ever read is a set of choices about those five. Hold four still and move one, or you will learn nothing.
This works in a cone, a flat bottom, or anything else with a paper filter.

The first pour wets the coffee and lets the trapped CO2 escape. Skip it and that gas will keep pushing water away from the grounds for the rest of the brew, giving you patchy, uneven extraction.
Use roughly two to three times the coffee weight in water and give it 30 to 45 seconds. Fresh coffee will rise dramatically. Older coffee will barely move, which is a useful freshness check in itself.
Pour slowly enough to keep control and aim for the centre, spiralling out but stopping well short of the paper. Water poured directly onto the wall runs down the filter without passing through much coffee, which is a channel by another name.
Agitation is a real variable, not an accident. A vigorous pour extracts more than a gentle one at the same grind. That is a tool, but only if you do it the same way each time.
Time from the end of the last pour until the bed is dry. It is the most informative number in pour-over and it costs nothing to collect.

Slow drawdown and bitterness usually travel together, because the coffee sat in water longer than intended. Fast drawdown and sourness likewise.
Run hot water through the empty filter before you add coffee. It removes the papery taste, which is real and detectable in a light roast, and it preheats the brewer and the vessel so your brew temperature does not collapse on the first pour.
A cone concentrates the bed toward a single hole, so flow is faster and the coffee at the point sits in more water. It tends to produce clarity and a lighter body, and it is less forgiving of a bad pour. A flat bottom spreads the bed evenly and drains through several holes, so extraction is more uniform and the result is usually rounder and sweeter, with more tolerance for sloppy technique.
Neither is better. A cone rewards precision, a flat bottom forgives its absence.
Sour and thin, drawdown fast? Grind finer. Bitter and drying, drawdown slow? Grind coarser. Balanced but weak? Keep the grind and use less water. Fix the grind before you touch anything else.
Log each brew with its grind, ratio and drawdown time. Over a couple of weeks the pattern in your best cups becomes obvious in a way that remembering never manages.
